Dear Cooking Light
I heart you. I really, really do.
I love that you can take recipes for foods I love, make them healthy, and not sacrafice the taste.
And that’s high praise coming from me.
Really, just wait until I post my recipe (on Eat, Drink and Blog) for the Chicken Cordon Bleu Macaroni and Cheese I made last week.
You might die of a heart attack the moment you see the ingredient list.
Or…maybe not. Seeing as you promote healthy eating and probably have your cholesterol and blood pressure well within normal limits.
Anyhoo, I’ve slacked off lately, but I decided today that I was going to make a concerted effort to start cooking MEALS again. And baking frozen crap from the freezer doesn’t count.
So I went through last year’s Recipe book and earmarked a few that I thought might work.
I decided I’d start with your Cavatappi with Spinach, Beans and Asiago Cheese.
And it was a GIANT, HUGE, SPECTACULAR Cooking Light failure.
But it wasn’t your fault. It was mine.
There’s something wrong with me, Cooking Light.
I just. can’t. do. it.
I added Mild Italian Sausage.
I had to.
And you know what?
IT WAS REALLY FUCKING DELICIOUS.
Please don’t kick me out of the club.
I promise to try.
But also don’t be surprised if I start a new trend.
Cooking Semi-Light. Ish.

HA! Love this, my kinda cooking right there!! I just wish i had time to cook all every night. I mangage to get a (almost) homecooked meal at least 3 nights during the school week. That is classic! Sounds yummy! So if I cook it and vacuum seal it and put it in the freezer…THEN heat it up…does that count as a “frozen meal?”

Cooking Semi-Light-ish — OMG I love it. I would buy that book, join that club. For sure.
Of course, I’d have to start cooking, I suppose. Would you believe that with all the kids I have, I rarely cook? I am so spoiled because my hubby loves to cook, and then he cooks in bulk so that all I have to do is heat ‘n eat the next day, when he’s at work (he’s a fire fighter w/ 24 hour shifts)
So yea, I’m spoiled.
When there’s nothing leftover from his meals the next day, we have cereal for breakfast. Umm. Yes. Does that make me a bad mom? I make up for it in other ways, I’m sure. (???)
But if I ever start cooking, I’m buying the Cooking-Semi-Light-ish cookbook because that sounds just about right!

It’s okay. We still love you, and we know that a life devoid of things like sausage and bacon is not worth living. (Disclaimer: in moderation, of course.) In fact, two staffers at this very moment have a pound of hickory-smoked country bacon right here at our desks. Not joking. Typing with hands that smell so strongly of bacon it might rub off here on your blog.

I have a really bad habit of cooking recipes from Cooking Light and totally reworking them to be full fat. They just taste better my way, full of butter and bacon and mayonnaise and whatnot.

And cooking semi-light ish or even sort-of-semi-light-ish… look! This cheese I smothered the meal with was made with 2% milk! …is better than cooking light. Because mmmmmm cheese.
